If you dont use pickled red onions as a condiment, I'm here to tell you... NOW is the time to start! They are so perfect and delicious on sandwiches, tacos, and burritos. Do yourself a favor and make these super easy pickled onions. Your plain old tacos and sandwiches will be so happy you did!

Ingredients
-1 red onion sliced
-2 garlic cloves crushed
-1/2 teaspoon black or rainbow peppercorns
-1 cup water
-3/4 cup Original Master Tonic (if you don't have enough or want to use your Master Tonic sparingly, you can use any mix of Master Tonic with plain apple cider vinegar)
-1 tablespoon coconut sugar
-1 teaspoon sea salt or pink salt

Instructions
-Add sliced onions, garlic, and peppercorns to a clean jar.
-On the stovetop, warm Master Tonic, water, salt, and sugar until all is dissolved.
-Pour the vinegar mixture over the onions in the jar. Gently press the onions to ensure they are covered.
-Let come to room temperature then place the lid on the jar and keep stored in the refrigerator until ready to use.
